Technicolour Salsa

Prep Time: about 30 minutes
Serves 10

3 medium tomatoes, finely chopped
½ c (125 ml) red onion, finely diced
1 garlic clove, finely chopped
1 c (250 ml) zucchini, finely diced
½ c (125 ml) orange bell pepper, finely diced
½ c (125 ml) yellow bell pepper, finely diced
1 jalapeno pepper, seeded and finely chopped
¼ c (60 ml) fresh cilantro, chopped
1 tsp (5 ml) ground cumin
¼ c (60 ml) fresh lime juice


1. Place all ingredients in a medium bowl. Gently stir to combine. Cover and refrigerate 4 hours to allow flavours to meld.
2. Before serving, gently stir salsa to wake it up.
