Basket of veggies for dinnerHarvest! Harvest! Harvest!

The tomatoes are starting to really ramp up. Have done three pickings through the week so there are tomatoes covering the kitchen table and all available space in the dining room.

The influx called for lots of toasted tomato sandwiches for lunch, a feast of eggplant steaks, and a big pot of ratatouille soup…which also used up a couple of zucchinis.

The eggplant steaks are delicious! Even someone who is not a fan of eggplant should give this recipe a try. Granted, that person would need to have a sense of adventure. But if the non-eggplant fan were to walk in the door while the eggplant steaks are baking…and they did not know what was on the supper menu…guaranteed they would take one whiff of dinner cooking and ask what the great smell was. Our youngest son really nailed it. He says, “they smell just like pizza cooking in the oven.”
